Kosha Mangsho (Mutton Curry)

Ingredients:
For marination:
- 1 pound (1/2 kg) Bone-in goat meat.
- 2 teaspoon ginger.
- 2 teaspoon garlic.
- 1/2 cup mustard.
- 1/2 cup milk/yogurt.
- 1 tablespoon vegetable oil.
For the curry:
Whole spices for crushing
- 4 tablespoon vegetable oil.
- 3–4 green cardamoms.
- 2 black cardamoms.
- 1 inch cinnamon stick.
- 2–3 cloves.
For sauté:
- 2 bay leaves.
- Crushed whole spices (see above).
- 3–4 whole [dry] red chilies.
- 1 teaspoon sugar.
- 1 cup of onion.
- 1 cup of shallot.
- 1 teaspoon chopped garlic.
- 1 teaspoon chopped ginger.
After sauté:
- 2 teaspoon coriander powder
- 1 teaspoon turmeric
